Properties: white powder or crystalline solid. It tastes sour. Soluble in ethanol, slightly soluble in water, insoluble in chloroform.
Uses: as a food sour agent, it plays an important role in bacteriostasis and antisepsis. It is an intermediate of fine chemicals such as pharmaceutical and optical bleach. Fumaric acid is also used to produce unsaturated polyester resin.
